Traditional Hedmark fare includes roast veal, puddings, home-preserved fruit, cookies, wafer cones, flatbread and griddle cakes, smoked, fermented and cured fish and a wide range of potato dishes.

In Finnskogen, "flesk & motti" (cured pork in an onion and sour-cream sauce) and "gjeddekaker" (fish cakes of pike) are among the traditional dishes.

Some of the specialities Østerdalen can offer are elk stew, elk steak, powan & potatoes and the traditional bread "tynnkake".
