Hardanger is abundant in high-quality raw ingredients such as fruit, berries, lamb, calf, goat kids, red deer, reindeer, cold-water fish and seafood.
The climate along the fjord is ideal for growing fruit and berries. Thanks to the Gulf Stream, the late spring and the light conditions, the fruit ripens slowly giving it a full flavour.
Some 40 per cent of all Norwegian fruit is grown in Hardanger, and the region accounts for approximately 80 per cent of the Norwegian cherry production.
A good balance between acid and sugar content is what characterises the apples farmed in Hardanger - something that makes them ideal for use in food and cider production. This is due to the favourable farming conditions provided by climate and nature. The climate is cool with excellent light conditions during the growing season. At the same time, warm and sunny summer days will ensure that sufficient levels of sugar are produced. The cool nights will also contribute to increase acid and sugar levels prior to the harvest.
Autumn 2004 saw the start of the project "A Taste of Fruitful Hardanger". The project aims to promote local food production, and make the products available to the general public. This means giving people the opportunity to buy directly from the producers or farm shops. For a company to use the label "Hardanger Menu" it will have to offer one or more dishes based mainly on local ingredients.
