Hallingkost – a taste of Hallingdal

Hallingkost is food that is almost exclusively prepared from local produce. Much of the produce is organically grown and the food is prepared without using artificial additives. Food from Hallingkost provides special character to a meal.

Local cheeses and spelt bread belong on the breakfast table. Cured meat, fish products and crispbread together with spring water are suitable for both everyday food and festivities. "Rømmebrød", "gofalefse" and "gommokaku" are popular with coffee, and new generations as well as old appreciate these dishes. Red ("Raud") and White ("Kvit") Halling wines are especially suited to the Halling cuisine.

Småmat and lefsekling

Småmat and lefsekling are deeply traditional, simple party food. Småmat must not be confused with soup as a starter. It has always been served as the main dish together with lefsekling and malt beer. The salty småmat in combination with the sweet lefsekling has been elected the national dish in Buskerud.

Mountain farm fare

Hallingdal has several high mountain farms open to the public in the summer where true high mountain farm fare can be found. Thick cream, butter and cheese are popular food products that are worth taking home with you. Freshly made pancakes and other griddle-baked goods are also an experience that belongs to high mountain farm life. Some of the farms have animals that may be petted, and at fixed times the public may participate in activities like milking and cheese-making.
