Fruit distillate with ØX
This course is part of the official program for the Trøndelag Food Festival 2025.
Fruit distillate, or eau de vie, is an exciting category of spirits with a long history in Europe. They can be made from all types of fruit and berries and are simply the distilled essence of this raw material.
Distiller Ulrik from ØX will be here to talk about how they are made, what makes them so special and show off some flavors, all from 100% Norwegian raw materials produced in Trondheim. There will be tastings of different types of fruit, both barrel-aged and fresh.
About the course leader:
ØX has been operating a distillery since 2021 and has worked a lot with the distillation of Norwegian fruit, especially apples and cherries, but many other types as well.
Ulrik Bjerkeli is head distiller at ØX and has helped build both the brewery and the distillery.
