Medisterkaker
Traditional Norwegian pork meatballs
Homemade medisterkaker are very popular at Christmas time, but can be enjoyed at any time of year.
Although numerous recipes exist for these meatballs, but they're usually made with a combination of ground pork, flour, eggs, salt, nutmeg, ginger, milk, black pepper, and oil.
At Christmas, medisterkaker are traditionally served with pork ribs, boiled potatoes, sauerkraut, mustard, and lefse. Delicious!
Ingredients:
makes 8 servings
1 kg fatty minced pork (medisterdeig)
3 tsp salt
5 tbsp potato flour
500 ml whole milk
0.75 tsp pepper
0.5 tsp ground nutmeg
0.25 tsp ground ginger
4 tbsp butter for frying
Garnish:
4 apples
2 pkg prunes
1 tbsp butter for frying

Method:
Preparation time: 40–60 min
Difficulty level: medium
NOTE: It's important that all the ingredients have the same temperature and are as cold as possible.
1. Add salt and knead the dough by hand or in a food processor until it becomes viscous (sticks to your fingers).
2. Add cold milk a little at a time, mixing the dough well between each time. Add potato flour and spices when you have added 2/3 of the milk. Stir well, and add the remaining milk.
3. Shape the dough into small round cakes using a spoon. Fry in butter at a medium temperature in a pan until brown. Simmer in water, stock or broth for approx. ten minutes.
4. Cut the apple into slices. Fry them together with the prunes in a pan with butter.
Serve together with pork ribs, ribbe, and other traditional Norwegian Christmas dishes or with sauerkraut, boiled potatoes and gravy.
