Potato waffles with smoked salmon

Waffles and salmon?

It's not as crazy as it sounds!

Stian Haugnes, the Norwegian head chef of the year in 2023, from Thon Hotels in Svolvær in Lofoten, has shared his super tasty and easy-to-make recipe with us.

The salty potato-based waffle pairs perfectly with the soft texture and mild flavour of Norwegian salmon.

Ingredients

(4 whole waffles)

100 g almond potato or Gulløye potato  

1 egg 

35 g flour

1 tbsp duck fat or butter

½ tsp baking powder

200 ml cream 

Salt and pepper  

Seaweed from Lofoten Seaweed (optional)

Approx. 30 g of smoked salmon

Herb mayonnaise (parsley and estragon or whatever other herbs you like)

Method

Boil the potatoes in unsalted water until tender.

Drain the water, steam the potatoes dry, and mash them. You can also use cold, previously-boiled potatoes.

Stir in duck fat/butter, egg, flour, and baking powder.

Dilute the batter with cream until it reaches the desired consistency, and season with salt and pepper.

Cook the waffles in a waffle iron until they are golden and lightly crispy. You can alternatively use a sandwich iron or make small pancakes in a frying pan.

Allow to cool.

Serve with sliced smoked salmon and herb mayonnaise (mix the desired quantity of mayonnaise with herbs of your liking).

Garnish with freshly chopped herbs.

As we say in Norway: Vel bekomme! (Bon appetít!)

Hot tip: Potato waffles are tasty with almost everything! Vary the toppings according to your preference.

They also pair very well with stockfish cream.
