RECIPE:
Lefse with stockfish cream

Combining a potato lefse, a kind of Norwegian 'tortilla', with a delicious, super-tasty cream made of traditional Norwegian stockfish = The true flavour of the north!

Every year, migrating Atlantic cod called skrei swims from the Barents Sea to the coast of Northern Norway to spawn, setting the stage for one of the largest seasonal fisheries in the world. 

The skrei is hung on racks and dries naturally outdoors for months. 

"Stockfish from Lofoten" is a Protected Geographical Indication (PGI) in Europe, just like Champagne!

Try Mymint's delicious recipe, which she served when competing for the young chef's award at Bocuse d´Or in Trondheim in 2024!

Ingredients:

Soft Potato lefse

300 g potatoes

100 g flour

100 g cream

½ ts salt


Stockfish cream

200 g diluted stock fish

1 egg

200 ml sunflower oil

½ garlic bulb

½ ts salt

1 ts lemon juice

Mustard seed

Method:

Potato lefse

  1. Peel the potatoes and boil until soft.
  2. Mash the potatoes into a puree through a colander.
  3. Mix in cream and flour.
  4. Add salt to taste.
  5. Use a rolling pin to flatten the dough to the desired thickness. Cut out round lefse with a glass.
  6. Fry both sides of the lefse at medium high heat. 

Stockfish cream

  1. Boil stockfish in a pot of salted water until tender.
  2. Add egg, mustard seed, garlic, salt, lemon juice and oil to a bowl. Blitz with a hand mixer to make aioli.
  3. Add salt and lemon to taste.
  4. Combine the stockfish with a little aioli at a time until you get the desired consistency.
  5. Serve the stockfish cream on lefse (or crackers/bread) adding any toppings you desire, e.g. pickled onion, bacon, or fried Lofoten Seaweed.
