Norwegian Christmas cookies
According to Norwegian tradition, it isn't really Christmas until you bake seven kinds of cookies.
This custom began about 140 years ago, when the first Norwegian cookbook was published. It declared that at Christmas, every respectable housewife should bake seven types of cookies!
Many fill their tins with sandnøtter. These small cookies are easy to prepare, have a crumbly texture, and literally melt in your mouth...
Ingredients:
Makes approximately 90 small cookies
250 g butter
150 g sugar
1 egg
500 g potato flour
125 g wheat flour
4 tsp vanilla sugar
1 tsp baking powder

Method:
Preparation time: about an hour
Difficulty level: easy
1. Mix the butter and sugar together until the mixture is light, creamy, and white.
2. Beat the egg and stir it into the mixture, then sift in the dry ingredients.
3. Form the dough into a ball, cover it with plastic wrap, and let it rest for about an hour.
4. Roll out the dough, then hand roll it into a sausage shape. Cut into small pieces and roll each one into a ball.
5. Place the balls on a baking tray covered with baking paper. Bake the cookies in the middle of the oven at 180°C for approximately 10 minutes.
