Norwegian krumkaker
Salty, whole wheat
Christmas biscuits
“Krumkaker are a classic Christmas sweet treat. Thus slightly saltier, whole-wheat version is also perfect for savoury toppings.”

“Try serving them as a starter – the touch of salt make them great with savoury toppings!”

Ingredients:
4 eggs
20 g sugar
250 g butter
100 g flour
150 g emmer flour
1 pot of sour cream
1 red onion, finely chopped
Salmon roe
Dill
Method:
Equipment: Krumkake iron
If you don't have a krumkake iron, you can use a waffle iron.
1. Melt the butter and move the pan aside to cool.
2. Whisk the eggs and sugar until combined.
3. Stir in the butter and flour. Let the batter rest for 15 minutes.
4. Heat the iron and pour a tablespoon of batter onto the middle of the iron. This makes round cakes that are smaller than ordinary krumkaker. Fry the cakes until golden brown, and leave to cool on a rack.
Serve the cakes with the topping of your choice, or plain so everyone can choose their own topping, or portioned on a platter.
