January: warm hearts and freshly baked buns
Since the days are short and the nights are long, January in Norway is all about kos – a feeling of warmth, comfort, and togetherness. What better way to embrace kos than with some delicious baked goods?
February: seafood and Sami Traditions
February marks the beginning of the skrei (Arctic cod) season, offering the freshest and most delicious seafood. In addition the Sami National Day on February 6th is an excellent occasion on which to celebrate Sami culture and cuisine, with reindeer dishes taking centre stage.
March: waffle love
March brings beloved Norwegian waffles into the spotlight, especially on Waffle Day (March 25th). Thin and heart-shaped, these waffles are best enjoyed with a generous topping of brunost (sweet brown cheese) or jam.
April: hooked on spring fish
April is a great time for seafood lovers. Salmon remains a favourite, but other white fish (Norwegian names in parenthesis) like saithe (sei), plaice (rødspette), and halibut (kveite) are also at their best. On land, you can enjoy early spring vegetables like asparagus along with lettuce and spinach.
May: feast like a king on the 17th
May is all about festive 17th of May buffets! Expect lefse rolls, cured meats like fenalår (cured lamb), and an array of traditional Norwegian dishes to mark Constitution Day in style.
June: cheese, please!
June celebrates Norway's dairy heritage as cows return to summer mountain pastures, producing rich milk for artisanal cheeses. Enjoy creamy rømmegrøt (sour cream porridge) or refreshing rhubarb juice while exploring summer mountain farms.
July: berry bonanza
July is berry season in Norway! Strawberries and all kinds of cherries are ripe for picking at local farms. Start your summer meal with fresh seafood like mackerel, mussels, or shrimp for a true taste of summer.
August: apple delights
August brings the first apples of the season and freshly pressed cider. It's also time to enjoy cloudberries (multe) and hearty mountain meals (fjellkost), perfect for hikers exploring Norway's scenic trails.
September: root vegetables and stews
September is harvest time for root vegetables like carrots and potatoes, known for their rich flavour. Classic dishes like lapskaus (stew), småmat, or sodd make their way to the table as the days grows cooler.
October: lamb and game
October is lamb season, with fårikål (lamb and cabbage stew) taking centre stage. It's also prime time for game like elk and deer.
November: cosy comfort food
As winter approaches, November brings a host of warm, comforting dishes. Hearty stews and roasted root vegetables become staples. Classic comfort foods like homemade meatballs and Norwegian sweet buns return, alongside hot cocoa. The start of the Christmas party season adds to the festive atmosphere, marking the start of the holiday period. Remember to book your table early!
December: Christmas food bonanza!
December is all about traditional Christmas dishes in Norway. From ribbe (pork ribs) to lutefisk and an abundance of biscuits and gingerbread treats, it's a month-long feast that brings family and friends together.
